I’ve been saying “soup season” since the first crisp autumn breeze, and I probably won’t stop until I finally feel the warmth of spring sunshine on my face. So it will probably be a long while yet.
This winter I’ve been going big on Zuppa Toscana (gotta love an Olive Garden copycat recipe, right?).
But now? It’s time for Leek & Potato Soup. Or Potato Leek. Whichever side of the pond you’re from and however you say it doesn’t matter. What DOES matter though, is that we’ve made it through the chill of autumn, the cold busyness of Christmas and now we’ve got this hearty, creamy bowl to curl up with after a long January day. It’s simple, comforting, and as satisfying as that first cold-weather sweater wear. Plus, you can whip it up in one pot - my kind of recipe!

Dairy Free Leek and Potato Soup
Serves 6
Tools:
Large lidded pot or dutch oven
Blender
Ingredients:
1 tablespoon olive oil
1 large onion, roughly chopped (250g)
2 medium-sized leeks, washed and roughly sliced (350g)
2 celery stalks, washed and sliced
2 garlic cloves, peeled and chopped
5-6 potatoes, peeled and diced into 1 inch pieces (900g/2 lbs)
4 cups vegetable stock (1 litre)
1 bay leaf
½ teaspoon salt
¼ teaspoon black pepper

Notes
Serve with crusty bread and topped with fresh chives, crispy fried leeks, seeds or croutons.
Potatoes: Choose a variety that’s best for mashing, like Maris Piper, King Egwards, Yukon Gold or Russet.
Store in an airtight container in the fridge for up to 4 days, or in the freezer for up to 3 months.
Extra creaminess: Add a splash of dairy free heavy or double cream or a swirl of coconut cream.
Short on time? Use frozen leeks, onions & garlic to speed up prep.
