Can we talk about how cauliflower and chickpeas make the perfect curry duo?
Honestly, it’s like they were meant to be.
This cauliflower chickpea curry is my go-to meal for those nights when we want something warming, quick and simple to make.
As a dairy free-er, it can feel super annoying to be offered vegan food options, because, well, most of us enjoy meat! Amirite?! But every now and then, I love cooking and eating a good pulse-based meal. It’s crammed full of flavour and fibre and so for this chickpea and cauliflower magic, I’m happy to pretend to be vegan and do my bit for the planet and my gut health. It’s also kind to the bank balance, so it’s a win-win.
