This week’s recipe is for all those people out there who just need a quick and easy dinner that doesn’t require much thought.
I’m pretty sure I speak for all mamas when I say ‘we’re tired, and we can’t always cope with the overwhelming reality of what’s required of us!’.
That’s part of the reason I haven’t been around on Substack as much as usual in the last couple of weeks. Life has been a bit much.
So, I've been following my own advice—not pushing myself to the brink, but intentionally stepping back to reset, spend time with my kids, and take a much-needed break from some of my work.
As I’ve done that, I’ve been reflecting.
I’ve realised that girls of my generation were sold a lie as we grew up.
We were told we could have it all.
Do well at school!
Get a degree!
Have a career!
Oh, and while you’re at it, you can (and probably should) also have a family, be a good wife, have a clean home, keep fit, and make sure you always look like you have everything together.
But don’t you DARE think about showing signs of ageing. That’s the one thing you’re not allowed to do.
Yikes.

Ingredients:
1 ½ tablespoons olive oil
8 bone-in, skin-on chicken thighs (~4 lbs)
